Dragon Fruit Crepe Cake

Thin dragon fruit-flavored crepes stacked with fresh whipped cream and topped with fresh dragon fruit.

Do ahead
The crepe batter can be made a day ahead of time.
Prep the crepe batter
Whisk together flour, cornstarch, dragon fruit powder and salt. Pour into a blender.
Add milk, sugar and butter. Pulse until all lumps are gone. Add pink food coloring, if desired, and pulse again.
Rest batter in the fridge for at least 30 minutes or up to 1 day.
Cook the crepes
Heat a small nonstick pan over medium heat. With a small ladle or ¼ cup measurement, scoop batter onto the preheated pan and swirl it around until it reaches the edge of the pan in a full circle.
Cook for 30-40 seconds, then flip and cook 30 seconds more. Remove to a plate. Repeat until all of the batter is gone.
Make the whipped cream
In a stand mixer fitted with the whisk attachment or in a bowl with beaters, whip the heavy cream, powdered sugar and vanilla together until medium-stiff peaks form.
Assemble the crepe cake
Place a small dollop of whipped cream on a plate or a cake board, and spread thin to help the first crepe stick to the surface. Place the first crepe down.
Pipe a thin layer of whipped cream on top of the first crepe. Place the second crepe on top. Repeat until all crepes are used.
Decorate the top with additional whipped cream and fresh dragon fruit, if desired.
