These Honey Oat Bars combine the sweetness of honey and brown sugar with the crunch of banana chips, making for a deliciously wholesome snack or breakfast option.

1. Line an 8-inch square pan with parchment paper with overhang for easy release. Preheat the oven to 350°F. 2. Line a sheet pan with parchment paper. Pour the oats on the pan and spread out evenly. 3. Place in the oven to toast for 10-12 minutes, or until fragrant. Remove from the oven and pour into a large heat-proof bowl to cool. 4. In a small saucepan over medium heat, melt together the butter, honey, and brown sugar. Cook until boiling and just until all the sugar granules are melted. 5. Remove from the heat and stir in the vanilla and soy sauce. 6. Pour the warm melted ingredients into the bowl with the oats. Stir, then add the banana chips and stir again. 7. Pour the sticky mixture into the prepared pan. Press down as hard as you can all over with greased hands or another sheet of parchment paper. 8. Top with more banana chips and press again. Place in the refrigerator for at least 2 hours to firm up. 9. Remove from the pan and slice into 12 bars by making one cut down the center, then five cuts perpendicular to the first cut. 10. Store in an airtight container with parchment paper to prevent the bars from touching, as they will be quite sticky.
